Many people avoid non-vegetarian dishes mainly due to religion or health related issues. There are many vegetarian dishes which are even tastier and healthier than the non-vegetarian dishes. Following are few vegetarian recipes which can be served as starters, side dish and main course dish.

1. Makai Rolls:

Makai means corn; it is a dish where rice-rolls are filled with corn stuffing’s. It is mainly served as starters and children who don’t like chicken or egg rolls can try these rolls as an alternate. Garnish with grated coconut, sesame seeds, coriander and peanuts and serve immediately.

2. Thai Red Curry:

Thai red curry is fragrant dish and can be made mild to red-hot curry simmered with assorted vegetables. It is a healthy and light meal that is gluten free. It is hot, spicy and combines greatly with Thai lemon grass rice or even plain rice. It includes ingredients like chopped and lightly steamed vegetable stock, thick coconut milk, chopped Thai basil leaves, Thai red curry paste, sesame or coconut oil for frying. Serve it hot with steamed rice or noodles.

3. Penne Arrabiata:

In this Italian dish, arrabiata sauce is served along with penne and is garnish with chopped parsley & greeted cheese. The main ingredients of this dish are tomato, red chili, garlic, olive oil, penne, onions, bay leaves, black pepper (whole), chili flakes and salt. This arrabiata sauce is so flavorful that it is often used in different dishes too.

4. Minestrone Soup:

It is a thick Italian origin soup made with vegetables often pasta or rice is added in it. This dish for vegetarians is filled with healthy and low-fat vegetables stock. Its ingredients are beans, onion, kidney beans, carrots, bottle gourd, spaghetti, peas, cabbage and tomatoes. It is a versatile dish as it can be cooked with different vegetables available in different seasons.

5. Vegetable Khichdi:

Khichdi is a nutritious yet comfort food from Indian cuisine. This is easy to digest healthy food prepared with a combination of rice, lentils, vegetables and some spices. It requires rice, green gram, cumin seeds, cauliflower florets, asafetida, peas, turmeric powder, and water, salt, chopped French beans & carrots and serve it hot with a dash of pure ghee (clarified butter).

6. Vegetable Biryani:

Biryani is the most delicious and famous dish among many countries. Generally it is cooked with meat or egg but vegetable biryani is also good in taste yet making this dish more nutritious. It is a simple and easy mughlai main course dish loaded with chopped vegetables making it look more colorful.

7. Handi Paneer:

Handi panner is delicious creamy dish in which the paneers are cooked in special rich thick yoghurt gravy. Ingredients used in these dish are cottage cheese (paneer), fresh curd (yoghurt), chopped onions and tomatoes. Ginger-garlic, fresh cream, red chili powder, garam masala, butter coriander leaves, diluted saffron and salt. You can garnish it with dry fruits or with chopped coriander leaves and serve hot with naans/ parathas/ chapattis.

8. Mushroom Pulao:

Mushroom pulao is a flavorful dish and it can be made within few minutes. It is prepared with long basmati rice along with mushrooms making it a perfect dish that can be served as main course dish with other curries.

9. Hand-Rolled Chocolate Truffles:

The main ingredients in this dish are semi-sweet chocolate, heavy cream, unsweetened cocoa powder, toasted chopped almonds, and toasted white sesame seeds.
